I really enjoyed having the company as we traveled around the track, but I sure was glad that we were shielded from passersby because I know we probably looked like two crazies out there. But who cares, right? I really felt invigorated. It's been such a long time since I've jogged...it brings back those happy, youthful memories...but I digress.
I decided to make a healthy, fiber-filled breakfast, which is another phase of my journey. Oh, it was good....homemade blueberry pancakes (with flax meal for that additional fiber), a boiled egg, a sausage, and 100% sugar-free cranberry juice (gotta keep those kidneys happy too). I'll take pictures the next time I make this.
Lunch was an interesting endeavor. I made this tabbouleh-bean salad recipe found in the July issue of Essence magazine. It was fun making it and it looked really pretty, but I did not enjoy it. Maybe I'll experiment with some different spice combinations...the mint, cinnamon, and cayenne were a little too much for my taste buds. I had no choice but to go to some leftover chili with saltines.
Dinner looks a little more hopeful....
